Samphire, also known as sea beans or sea asparagus, is a somewhat uncommon vegetable that you’ll find served along with fish, lamb or pasta. This veggie grows near the sea and it absorbs minerals from the ground that you can then benefit from when you eat samphire.
This makes it similar to other salty sea vegetables, such as edible seaweeds.
